Maison Rostang

The Chef, Nicolas Beaumann, reveals a unique know-how and a mix of innovation and sincerity dedicated to the high-end Cuisine in each of his dishes. A cuisine based on excellent and high-quality products to achieve sophisticated and gourmet savors.
A magical balance appears between the grounds of the classical cuisine, the Rostang family’s roots (who comes from the Isere region) and the contemporary touches added to the dishes.
Those gourmet and refine savors pair marvelously with the exceptional wines of the restaurant’s cellar, which contains not less than 1 300 references and 50 000 bottles.
Michel Rostang is also a great collector and art lover, he always looks for locations with a soul and has decorated each of the dining rooms of the restaurant with masterpiece from his personal collection, the atmosphere is as splendid as intimist.

Flaubert

Michel Rostang is the first Michelin stared Chef to open his own bistrot in Paris in 1987, just around the corner of his gastronomic restaurant.
Le bistrot d’à côté Flaubert is a former grocery that Michel Rostang has been keen to embellish while respecting its original style and decor in order to preserve its soul. The authenticity of the place is accentuated by the setting and by the Chef’s personal collection of ‘Barbotines’ (porcelain jugs) and of Michelin guides’ first editions.
Regarding cooking, le Flaubert offers a “terroir” high-quality cuisine, revisited but inspired by the regional specialities from Lyon, Savoy and Provence, that Michel Rostang loves. The menu changes every month in order to mix classical bistrot dishes with more innovative compositions and nowadays savours.

Dessirier

Since 1883, the restaurant Dessirier is famous for its fishes, seafood and oyster bar. Since 1996, Michel Rostang succeeded to keep up this reputation.
The chef, trained at the Rostang school, and its team prepare whole fishes, grilled or “en croûte de sel” from the daily arrival: gorgeous sea bream (1,2 kg), turbot (1,5 kg), sea bass (1,2 kg) or the indispensable sole of 1,2 kg which is unique in Paris but also wonderful creations inspired by all these fresh sea products.
With its brand new interior design exalting contemporary Art and Cuisine - the restaurant has been wholly redecorated in August 2010 – Dessirier is the place to be in Paris for a sailing spirit.

Jarrasse

Between Deauville and la Baule, Neuilly is the place where you can taste beautiful seafood, shellfishes and fishes at Jarrasse, « l’Ecailler de Paris » (Paris’ Oyster Bar).
When Michel and Caroline Rostang took over this restaurant in 2005, they made the bet together to bring back to life this unique and prestigious place.
7 days a week, they offer an inventive, iodized but flavoured cooking to their business and family customers. They managed to create a new atmosphere, all about the shore, the seaside, boats, fishing with plenty objects of the 30s and a wonderful rock-shaped bar that welcome you at the entrance of the restaurant.

Absinthe

L’Absinthe is a cooks’ bistrot firmly modern. The menu is entirely created, tested and produced in the restaurant’s kitchen. Every single task from the vegetable slicing to the sauces’ seasoning including the fishes’ filleting, is executed in situ from A to Z. Each dish conveys the creative family spirit at the rate of the seasons and of their journeys.
The restaurant’s decoration will also make you feel this travelling and dynamic atmosphere: a mix between a typical Parisian bistrot and a loft in New York.

Café des Abattoirs

The Café des Abattoirs is a meat counter and wine bar open 7 days a week, where it feels good seating down to table to enjoy the best of the butcher tradition with refined meat selections respecting the product totally. An emblematic place for the French gastronomy as it is the 6th restaurant of the 6th Rostang’s generation.
The Café des Abattoirs is born from sharing: big tables of family and friends over which the dishes run and where everyone tastes in its neighbor’s plate. There is no “à la carte” but 3 set menus including the season appetizers for the whole table, a piece of meat, its garnish and a dessert or the camembert cheese. All the meats are cooked in the wood-fired oven, a hybrid way of cooking between a traditional oven and a barbecue, thanks to a mix of vine shoots and Argentinean wood, which caramelizes the pieces and gives them an unrivalled taste. Each piece of meat is served in a cast iron saucepan, so that every guest can share the slices.
From 6pm, the bistrot’s counter turns into a wine bar, offering a large choice of bottles, by the fillette or by the glass, and some exquisite cooked meats to savor.
