Miéral's Bresse chicken has the place of honour at the bistrot Flaubert !

The Bresse chicken is a French exception: it's the only poultry recieving a PDO and this very fine and tasty meat is a unique product, resulting of the passion of one family, the Miéral. 

From 1919, the Miéral led this production and carried it on: preserved feeding, a bounded terroir, supervised animals. For 4 generations, the family made every effort to produce a meat whose reputation has since crossed the borders. 

Therefore for 40 years the Rostang have naturally chosen this family for supplying the Bresse chicken to their restaurants, including the 2-starred-michelin. Between the Miéral, producers for 4 generations, and the Rostang, restaurants owners for 6 generations, stong links of trust have been forged: the bistrot Flaubert's special menu "Chicken from Bresse" is its gourmet prolongation.

The livers become terrines, with stewed tangy red onions, like a delicous tribute to the region of Lyon. For main course, the chicken "en crapaudine" comes in two services: the filleted breast is served with devilled sauce and mashed potatoes; then the deboned leg is plated up with curled endive seasoned with a tonic vinaigrette sauce.
