L’Absinthe is a cooks’ bistrot firmly modern. The menu is entirely created, tested and produced in the restaurant’s kitchen. Every single task from the vegetable slicing to the sauces’ seasoning including the fishes’ filleting, is executed in situ from A to Z. Each dish conveys the creative family spirit at the rate of the seasons and of their journeys.
The restaurant’s decoration will also make you feel this travelling and dynamic atmosphere: a mix between a typical Parisian bistrot and a loft in New York.

Dessirier
Since 1883, the restaurant Dessirier is famous for its fishes, seafood and oyster bar. Since 1996, Michel Rostang succeeded to keep up this reputation.
The chef, trained at the Rostang school, and its team prepare whole fishes, grilled or “en croûte de sel” from the daily arrival: gorgeous sea bream (1,2 kg), turbot (1,5 kg), sea bass (1,2 kg) or the indispensable sole of 1,2 kg which is unique in Paris but also wonderful creations inspired by all these fresh sea products.
With its brand new interior design exalting contemporary Art and Cuisine - the restaurant has been wholly redecorated in August 2010 – Dessirier is the place to be in Paris for a sailing spirit.

The Chef NATHAN HELO knows how to please with know-how.
L’Épi Dupin opened in 1995 and quickly stood out on the Parisian culinary scene with its gourmet, seasonal and vegetal cuisine as well as its eco-responsible approach. When the chef decided to leave in 2019, Nathan Helon, with the help of the Rostang family, sees the opportunity to create his first own restaurant. He already shares with the former Chef his engagement for seasonal cuisine and sustainable farming. The young Chef now spreads its wings by increasing the standing of vegetables. He also sources all his ingredients exclusively from small farmers and fisheries who share his sustainable approach.
Nothing goes to waste! Nathan ans his crew don't throw vegetable peelings, leftover stems and tops out. They always try to find something to use them for like, for example, dehydrating them to create concentrated powders with which they enhance their stocks, sauces and other purees. Also, the chef considers his suppliers more as partners, such as his oyster mushroom supplier who uses the coffee grounds collected from the restaurant to farm his mushrooms in the heart of the 16th district in Paris. Or, he mixes leftover mushroom stalks with squid ink to create a tasty condiment. The sprouts come from the vertical farm, Montreuil Hydro Pousse (east of Paris), and are grown without any pesticides nor uses GMOs. When the season comes for scallops, he supplies himself exclusively from the Normandy based fisherman, Alain Rigault. At the restaurant, The scallops' bards are used in a foamy soup so that none of this delicacy goes to waste. Meats and poultries are delivered whole by Seguin Gourmet so they can prepare delicious home-made gravies and use the trimmings for sauces and stocks.

The wine list selected by Caroline Rostang mixes organic and natural wines, promoting French regions and talented winemakers, all of them having either a sustainable, a natural or an organic approach.

MICHEL ROSTANG AND LE TRAIN BLEU, THE HISTORICAL RESTAURANT, PARTNER TO BRING YOU CULINARY EXCELLENCE The restaurant was founded for the famous 1900 World Exposition in Paris. It was initially called The Train Station Buffet, Le Buffet de la Gare de Lyon. In 1963, it is renamed Le Train Bleu as a tribute to the azure blue colour of the trains from the famous line called PLM and connecting Paris, Lyon and the Mediterranean sea. Rooms of the restaurant are protected and classified as historical monuments since 1972. Today, Le Train Bleu collaborates with the Rostang culinary group to read into the myth of the famous train station café and serve you meals bringing together generosity and strong regional roots. The two iconic culinary houses, both emblems of the French's finest gastronomy, worked together to imagine quality home-made food, giving priority to seasonal staple products and regional gastronomy traditions. The ROSTANG family and LIQUID CORP give birth to OCTOPUS, combining a restaurant to a cocktail bar.
While both living their passion for quality flavours and outstanding service, they imagine a hybrid venue where anyone can come and experience the best of gastronomy and cocktails.
They embrace the challenge of waking up the sleeping beauty of this famous business district by giving it a fresh energy.
Together, they rethink the concept of restaurant as a lively spot that adapts to its environment and time of the day. Cocktails become a centre piece of the menu and the place. A place where the menu caters to the needs of hungry workers as well as night owls. OCTOPUS unfolds.
Opened in may 2019, Caroline and Sophie ROSTANG entrust the chef Géraldine RUMEAU. Working hand in hand, they create an epicurean and multi-faceted menu. It ranges from generous pieces of meat, chargrilled over wooden fire, to light veggie plates without forgetting a selection of sea-side delicacies.
Starting from 17:00, Octopus becomes both a cocktail bar and a restaurant. Signature cocktails invented by the mixology master Sterling HUDSON from Liquid Corp are served by its crew, such as the Dirty Dick, the Moonshiner, Louie Louie or the Blue Bird. To top it off, the chef pairs with each cocktail a tapas plate to share, both complementing each other perfectly.
With 2 terraces, 150 square meters of outdoor space on La Défense district plaza, Octopus Grill & Cocktails faces the Takis pond and offers unique and outstanding views of the Parisian historical axis starting at La Grance Arche de la Défense and ending at the Arc de Triomphe.

ODETTE opened in 2017. Caroline & Sophie ROSTANG gave the keys to the kitchen to the Chef Rémi HENAUX with whom they work hand in hand to inspire and keep the spirit of an Urban Inn. The menu combines classic dishes as well as more daring creations with a sleek presentation, balancing sweet and savoury to perfection.
The Chef favours seasonal and vegetal products inspired by the daily farmer's market. His unique and refreshing creations extend the gourmet and convivial spirit of this urban inn, giving it a modern twist.
Open 7 days a week and ideally located in the heart of Paris in between the Louvres and Les Halles, ODETTE is the perfect spot for a tasty gourmet break.
For Lunch, you can choose from a 24€ special daily market menu including an inventive amuse-bouche, a choice of meat or fish course and a coffee served with a tasty honey madeleine.
