Floating island with pink pralines
Ingredients
6 large eggs
75 g sugar
100 g de pink pralines
salt
For the custard :
75 cl semi-skimmed milk
4 vanilla pods
125 g de caster sugar
Preparation
The custard:
Separate the egg whites from the yolks and keep the whites aside.
Pour the milk in a saucepan with the vanilla pods split in 2 and srubbed.
Meanwhile, pour the egg yolks on the sugar and whisk until this mix whitens. Add the milk, pour the whole thing back in the saucepan and put it over middle heat. With a wooden spatula, stir in incessantly doing figure-of-eight so that the custard doesn't grip.
As soon as the mixture coats the spatula, pour in a cold bowl and stir in for 5 minutes more. Then put it in the refrigerator.
The floating islands:
Crush the pralines.
Whip up the egg whites firmly with a pinch of salt and gradually blend the sugar into it. Add the pralines and pour in a baking tin.
Put it in the mircowave full load.
When the whites begin to go over the tin (5-10 seconds), they are ready !
